Peach Salsa Shrimp Tacos
Fresh, colorful, and packed with flavor, this is one of my favorite easy summer dinners. I first made these after a trip to Hawaii in 2023, and I still make them every summer. I love to use white fish for this recipe as well!
Ingredients
- For the peach salsa
- 1 c peaches, diced
- 2/3 c tomato, diced
- 1/2 c red onion, diced
- 1 cup cilantro, chopped
- Large handful fresh basil, chopped
- Juice of 1 lime
- Salt
- Pepper
- For the tacos
- 1 1/2 lbs shrimp, peeled and deveined
- 1-2 tbsp olive oil
- Garlic powder
- Paprika
- Oregano
- Tortillas of choice
Method

Add the peaches, tomato, red onion, cilantro, lime juice, salt, and pepper to a bowl and mix to combine.

Pat the shrimp dry and toss with olive oil and spices.

Coat your pan with olive oil and preheat to medium-high temperature.

Add shrimp and cook for 1.5-2 minutes per side. Be quick and prepared to flip it.

Warm the tortillas, fill with shrimp and peach salsa, and enjoy.
Notes
White fish can be used as a substitute for shrimp.
